A Valentine Delight: Almond Thumbprint Cookies

Almond Thumbprint Cookies with homemade wild grape jam

Actually, these grain-free yummies are excellent at any time of the year, but for Valentine’s Day, fill them with any type of pink, red, or purple fruit jam. They are so good!

This recipe is based on the one from p. 528 of my favorite cookbook, Nourishing Traditions. Makes about 24 cookies.

Almond Thumbprint Cookies

1 1/2 cups whole almonds

1/2 cup melted coconut oil or butter (I like to use 1/4 cup coconut oil & 1/4 cup yogurt or kefir to make them a little less rich for my tummy)

1  1/4 cups arrowroot powder* (start with 1 cup and add more if needed)

Rounded 1/2 cup sucanat

1/2 tsp salt

1 tsp vanilla extract

1 tsp almond extract

Fruit jam of your choice

Place the almonds into a food processor or blender and pulse to a fine meal. Transfer almond meal into a bowl, add the rest of the ingredients, and mix well. As mentioned above, start with 1 cup of arrowroot and add more if needed; I always have to add the extra 1/4 cup. The dough should be very nice and workable — not overly sticky.

Form dough into tablespoon-sized balls and place on an oiled cookie sheet. Make a thumb print in each cookie and fill the indentation with jam.

Bake at 325° for 20-30 minutes, or until cookies are lightly browned on the bottom. I’ve both under-baked and over-baked these, and they’re good no matter what; however I’ve noticed that if they’re under-baked they do tend to fall apart a little more easily.

Cool a bit and remove from the cookie sheet while still warm. If they seem to be glued to the cookie sheet, place them back into the oven to warm up again, and then they’ll be easier to remove.

*Curious about arrowroot? It’s actually not a refined product despite the look of it. It’s the dried, powdered root of a tropical plant that only grows in tidal flats where sea minerals are available. It’s therefore rich in trace minerals and in calcium ash (calcium chloride), which makes it easily digestible. In addition, the calcium ash in arrowroot is very important for maintaining the proper acid-alkali balances in the human body. Its downside is the price — $5.35 for a 1lb 4oz bag at our local health food store.

Philosophy Friday: I Followed My Heart & Quit My Job!

My cubicle at work, where I spent the past 5 years.

If you’ve been around here for a while, you might remember a Philosophy Friday post I wrote back in October: All That Glitters Is Not Gold.

For quite a while now, I’ve been aching deeply for a quieter, more soulful existence; putting my energy into things that feed my soul rather than into my non-fulfilling I.T. job. Yes…the whole ‘life is too short’ thing. There are certain parts of the job that I like — technical writing & documentation, software support, and some system administrator duties — but on the whole it’s not what really feeds my heart. For well over a year I’ve been feeling very torn and unclear about whether to stay or quit. When you’re torn and unclear is not the time to make a major decision.

So I waited.

And in early January of this year, things became clear. I finally felt a calm, deep knowing that it was time to let go of my job and move forward with my life in a way that’s completely aligned with my heart.

This was a good, secure job and although I knew it was definitely time to quit, it still took a surprising amount of courage. I spent 5 years there (7 if you count contract work), though it feels more like forever. I have roots there, I guess. For a good long time I kept talking myself into staying because of the steady paycheck and medical insurance. But it turns out that the energy balance was grossly uneven; I was giving a lot more than I was getting. The price I paid for that paycheck and insurance was quite literally my health and happiness. Yikes.

And so I quit.

Yesterday was my last day and it was actually harder than I anticipated. A heavy day. I realized I was more attached to some of my coworkers than I thought. All those “Good bye, I’ll miss yous” sure tugged at my heartstrings. Cleaning out my cubicle was also harder than I thought. It just felt surreal. I put so much of my energy into that job that it felt weird to suddenly be erasing all traces of myself. When someone from a neighboring department heard I was leaving, she exclaimed “What will they do without you??! You’re their backbone!” That was the nicest compliment and made me feel good.

But after a good night’s sleep last night, I’m feeling much more in my groove today and thinking about all the things I won’t have to do anymore now that I’m not there. Hallelujah! It was most certainly the right decision. I’m so excited!

I’ll still do some contract work from home for the I.T. department now and then, but I’ll most certainly be de-stressing and doing lighthearted things! Then I’ll be getting my own things going — ways to make a livable income without working the rat race. We’ll see what transpires! I think it’ll be a great new adventure. Cheers to that!

Wow It’s Cold Out!

"Hi!" - After my walk home from work.

We’ve got some deep cold going on right now!

Has it hit your neck of the woods?

Today broke a record; it only got up to -1!

Tonight will be -21 with windchill around -30! And it’s humid, making the cold seem colder. To breathe deeply makes your lungs hurt, and the moisture in your nose freezes on each in-breath! I walked home from work today (2 miles) instead of taking the bus, just to feel it. Invigorating, but two rules! 1.) Keep moving. 2.) Don’t take your hands out of your mittens, ever! I was amazed at how quickly they got numbed and absolutely chilled to the bone. Shew!

And how grateful I was to come home to a cozy house with a hubby who squeezed me close to warm up my icy skin! And then to sit with my feet against the space heater and have a steaming cup of tea in the dimming twilight. ***Ahhhhhhh***
