Warm Cookies for a Chilly Autumn Afternoon

Chocolate Zucchini Cookies

It sure has been cold here lately. We’ve had temperatures down into the teens, with our first snow storm a few days ago. This is highly unusual, and most of the leaves haven’t had a chance to turn colors yet, and are now hanging limply from their branches, frozen! Kinda sad!

It’s the perfect time, therefore, to bake some Chocolate Zucchini Cookies and have a glass of milk.

Chocolate Zucchini Cookies

1/2 cup butter, melted (or substitute up to half with applesauce or yogurt)

1 cup sugar (I like rapadura or sucanat)

1 egg

1 tsp vanilla

2 1/4 cups whole wheat flour

1/2 cup cocoa powder

1 tsp baking soda

1/4 tsp salt

2 cups zucchini, shredded and excess water squeezed out

1 cup chocolate chips (optional)

Mix up the butter, sugar, egg, and vanilla. In a separate bowl, mix all dry ingredients together, and then stir in the wet ingredients until well combined. Stir in the zucchini and chocolate chips, and drop  by rounded spoonfulls onto greased cookie sheets and bake at 350 degrees for about 10 minutes, or until the cookies hold their shape when you lift them up with a metal spatula. 

To eat them: Sit by a window where you can see rust-colored leaves against a gray sky, and hear the blue jays calling to each other from the trees. Light a candle, bring over your plate of warm cookies and a glass of milk, and relax into your little bubble of paradise. 🙂

    Warm cookies, cold milk and all is right with the world. But I do have to say that while some things are optional in life, chocolate chips ain’t one of ’em! Enjoy those cookies!!!

    Your recipes for chocolate zucchini, grape jam & grape leather inspire me. I’m going to start the jam today. The leather will follow as I can see this will be a great gift for my active adult kids.

    Elaine,
    Yes – as you will hopefully see, the grapes jam and leather are divine and if you have an overabundance of grapes this is a great way to use them up. Though what you’re left with at the end is a lot less than the volume you started with so it will be a real and true gift of culinary gold!
